To save time when it comes time to bake your holiday pies, there are two options. You can cheat and buy the premade, frozen crusts. Or, if you want the taste of homemade but hate the time it takes to roll out and shape the crusts, make them now and freeze them. When it's time to bake your pies, remove the crusts from the freezer the morning of your pie baking. They should be thawed by the time the filling is ready in time for your Christmas eve dinner.
